Tea and Honey Pairing | Raw Honey extracted and paired with Darjeeling Tea

Tea as you know comes in overwhelming varieties from different regions of the world. Our family deals with single origin Darjeeling Teas and many believe that single origin teas specially Darjeelings shouldn't be mixed with anything else. And to confuse you even more hehe, Darjeeling produces many tea varieties according to different cultivars and traditional green tea, black tea, oolong and white tea varieties. To a certain extent, its true, because for example the flavor profile of a Darjeeling First Flush white tea could be very very delicate and adding honey could alter the actual natural taste of the white tea. But what is important here is that tea is not what you read somewhere, but what you experience and build an acquired taste. If you like the pairing of Honey and Tea, do go ahead as long as you enjoy your brew.

Do you know that some tea tasters in India add a little bit of sugar in tasting teas? Thats how they have developed their taste buds. Its with sugar pairing that they will be able to assess the taste and quality of the tea.

Here is a unique opportunity for you to witness our in-house honey extraction/straining event. Today we got a knock on our door and there was a man with a huge pack of honey along with the honeycombs. We bought it as it and eased his trouble of carrying and hitting door to door for the sale. Watch our super woman, our Thunderbolt Tea manager, Neelam (a wonderful wife) also extract the honey.

It was a marvelous event witnessed by our two daughters, Neeharika and Mayanshi and myself (Benoy). The kids were in total awe as they were seeing the honeycomb live for the first time.

Finally we had to pair this honey and tea! To us this "Tea and Honey" pairing produced a different flavor profile because we had paired with a Darjeeling Clonal Second Flush (having a distinct single origin flavor profile, which we knew beforehand). This unique blend having their own distinctive flavor profiles resulted in something that was very extraordinary and definitely delicious tea. Tea as a drink varies and each has a set of rules for preparation, but you are the one that decides. So go and do some pairing like tea honey and ginger tea, with cinnamon etc. Make tea fun and enjoy! A particular tea may appear delicious to one and the same tea may appear to have a bad taste to another. So just Keep Calm and Enjoy your Tea.
